August Featured Recipe

Crunch Curried Chicken Salad


Ingriendents:

1/2 cup whole cashews
1/2 cup sweetened flake coconut
1 tbsp curry powder
2 tbsp mango cutney
1/2 cup plain yogurt
3 cooked boneless, skinless chicken breasts
2-3 green onions with tops
1 large Granny Smith Apple
4 cups of mixed baby greens


Directions:
1. Place cashews in Small Micro Cooker. Microwave on high 1-2 minutes or until cashews are fragrant, stirring every 30 seconds. Remove and set aside. Place coconut in micro-cooker. Microwave on high 2-3 minutes or until golden brown, stirring every 20 seconds. Set aside. Place curry powder into 8in Saute Pan, cover and cook over medium heat 1-2 minutes or until fragrant.

2.In a Stainless 2qt mixing bowl, combine chutney and curry powder. Add yogurt, stir until smooth. Reserve 1/4 cup for dressing.

3. Using Chef's Knife, dice chicken into 1 in. pieces. Thinly slice green onions and apple. Add chicken and green onions into the remaining dressing in mixing bowl, stir to coat. Combine apple and mixed greens into Stainless 4qt Mixing Bowl.
To serve, divide greens mixture among serving plates and top with chicken mixture. Sprinkle with cashews and coconut. Drizzle with reserved dressing.

9 Years and Going Strong

Today Rob and I are celebrating our 9 year anniversary. I can't believe it's been that long already! As a matter of fact, at exactly this time 9 years ago, I was standing outside the door to the church getting ready to walk down the aisle with my dad. I remember thinking that night as we were leaving the reception that how that was a really stressful day. Seriously it was--between rushing around to get my makeup done, hair done, and get the dress on. Than it seemed everyone else in the party was running late and the reception hall wasn't working out like it should have. The most relaxing part of the entire night was when I guess it should have been and what the whole night of the event--when we were at the front of the church saying our vows.

In the end it was a great night and we were surrounded by our family and our dearest friends! And we were married!!

The past 9 years definitely have not always been easy, but I am so glad to have had the man I love at my side (well when he wasn't out to sea that is) and to have shared all of these moments with him!

Fetal Echo

Today we went in for another ultrasound. Rob, for the first time this pregnancy, was able to tag along! Caleb's heart looks great!! Praise the Lord! This is always a worry for us as we've now had two children born with heart defects. Now just because his heart looks great right now that doesn't mean that there won't be problems when he is born, it just is better that they can't see anything now. According to the ultrasound he weighs 1lb and 1 oz. He seems to have a large head (just like his big brother Silas). Glad to be having a c-section! :) We also found out why it hurts so bad for me to walk, get out of the car, and/or walk up the stairs. Due to him being my 4th baby my ligaments that hold the pelvis together are very stretched out, which has therefore allowed my pelvis to already separate and for him to drop down. He is laying head down right on top of my cervix. I do have a feeling this is going to be a very long and painful 14 ahead of me. Thats 14 weeks if his lungs are mature, but could be as long as 17 weeks (oh please don't let it be so).
